All of Lenti's products are gluten-free and, since 2004 they are licensees of the Spiga Barrata label, granted by the AIC – the Italian Association for Celiac Disease. The spiga barrata is a unique identification symbol and it offers authoritative reassurance for the consumers with celiac disease. The absence of gluten in the finished products is made possible by the preparation of brines with ingredients that are gluten-free.

This product certification guarantees gluten-free products through:

  • exclusive use of gluten-free raw materials (gluten < 20 ppm)
  • exclusive use of production/processing techniques which exclude the addition of gluten or gluten-containing substances (20 ppm gluten <)
  • monitoring of the risk of accidental gluten contamination.

It is implemented by the application of the company requirements regarding the product's technical specifications, the health and safety manual, the company's quality control procedures, and by the plan for analytical monitoring of all ingredients and finished products. The Italian Association for Celiac Disease (AIC), which performs annual inspection and testing, has established and verified the proper implementation and effectiveness of the provisions in the documentation mentioned above.

Passing the initial certification audit and maintaining all of the requirements in the early monitoring phases allows for the issuance and application of the "spiga barrata" label by the AIC. This label is applied to all Lenti products in order to allow immediate identification and possible consumption of the products, even by those with celiac disease. Lenti products are also allergen-free and do not contain substances or products that can cause allergies or intolerances as referenced in Annex II of EU Regulation n ° 1169/2011.
